New $35M kitchen design serving 2,500 offenders three times daily with chilled water HVAC, campus steam conversion, custom air handling units, and LEED-certified design.
The project is currently under design and is slated to be LEED certified. The new kitchen will be housed in the existing CI building. The project has been challenging and rewarding trying to determine the best solutions for the new kitchen while also maintaining facility operations. The new design has to be robust to hold up to the heavy-duty usage required to cook meals for 2,500 offenders, three times a day, but still be energy efficient.
The new HVAC design utilizes chilled water to eliminate the current kitchen's humidity issues. The chilled water system connects to the campus water-cooled chilled water system; however, it also has an air-cooled chiller to provide chilled water when the campus system is disabled in the winter months. Heating is provided from the campus steam distribution system, that SEC also designed, and is converted to heating hot water to serve new custom air handling units and VAV boxes.
The new design incorporates equipment that reduces both energy consumption and maintenance. Key features include:
The new plumbing system utilizes coated cast iron piping for grease waste piping to increase the service life. Floor cleanouts and access panels have been strategically placed so maintenance can be performed.
The electrical service was upgraded to accommodate the new kitchen loads. All panel boards are monitored by the building automation system to track energy consumption. Lighting is prison grade LED to reduce energy consumption.
